Over 1000 years old, the cleanser is ideal for those seeking all-natural beauty products

MICHELE SHAMIYEH WAS visiting Lebanon in 2003 when she discovered the versatile charms of olive-oil soap. “I found that I could use it for everything,” said Ms. Shamiyeh, 33, who was born in Beirut but has lived near San Francisco since she was an infant. The little green bar worked on her body, face and hair—and even as toothpaste and clothing detergent. Finding a good olive-oil soap back in the U.S., however, proved difficult. So she started buying it from Lebanese producers and selling it online under the label Zeetoon (olive in Arabic).

In the past decade or so, demand for olive-oil soap has risen steadily. Bader Hassoun, a native of Tripoli, Lebanon, whose family company Khan Al Saboun is one of the city’s oldest and biggest olive-oil soap producers and exporters, said that 10 years ago he did $200,000 in sales; last year that figure was $6 million—around 90% of it in exports.

It’s somewhat strange to talk about an ancient product in terms of trends. The all-natural cleanser dates back at least 1,200 years, to the Eastern Mediterranean cities of Tripoli, Aleppo in Syria and Nablus in the West Bank.

Its current popularity overlaps with the Western demand for beauty products that are made with high-quality raw ingredients and without chemicals. “My factory is like a kitchen,” said Mr. Hassoun, pointing to neat piles of lemon grass, thyme and almonds on the countertops and clean marble floors of the spacious stone house where a team of artisans makes his soap. “I use 100% natural ingredients.”

Ms. Shamiyeh has seen an attitude shift in recent years. “When I first began, people looked at me funny when I told them [the soap] was made of olive oil,” she said. But once she clarified that most soap is made from oil—whether vegetable, coconut or some other kind—the appeal of starting with a base of good olive oil became clear. “What you put on your skin is ingested into your system like anything you eat,” Ms. Shamiyeh added.

The three London-based Lebanese sisters behind the brand Jardins d’Eden also tout olive-oil soap’s many benefits. “It can be effective in minimizing wrinkles, and it’s considered the best remedy for dry skin, as it helps exfoliate dead cells,” said Rima Nazer, 37, who launched the company with her sisters Zeina, 38, and Zahira, 42. The soap’s mildness, explained Rima, is also helpful for people with sensitive skin conditions such as eczema or psoriasis.

Though the Nazer sisters’ company is only three years old, their father was in the olive-oil soap business as well. He founded Nazer soap in 1967 in Tripoli. The sisters grew up there, working for the family business during summer breaks, until leaving for universities in various locales and finally ending up in London. They’ve tailored the traditional soap-making technique they learned from their father to appeal to a luxury beauty market. Their soaps, which sell at Harrods in London and on the company’s website, boost olive oil’s benefits with shea butter and various combinations of delicious-smelling essential oils. One bar uses ylang ylang and lavender to promote relaxation, while another incorporates manuka honey and oats to exfoliate and soften skin.

The bars may sound quite different from the ones their father made, but the technique is still the same. “Our father used to compare the soaps to little children,” said Rima. “We never understood why until we started making it ourselves.”

As she tells it, the process is quite involved. Once mixed and poured into molds, the warm soap needs to sit for a couple of days to solidify. It’s then taken out and cut into small, fragile bars that are left to dry for another four weeks. “Only when this newborn is well taken care of and becomes mature, is it time to let it go,” said Rima.

Even as olive-oil soap gains in popularity around the world, Mr. Hassoun of Khan Al Saboun is careful to cultivate an elite reputation for his wares. “I don’t want my soap to be on supermarket shelves,” he said. He says he only sells to high-end retailers and apothecaries. Still, he noted that his motivation goes beyond profit. “I love making a natural product that’s environmentally friendly,” he added. “It’s an investment in the future.”

A Historic Market’s ‘Soap’ Opera

The soap market in Tripoli, Lebanon, called the Khan al-Saboun, was built over 400 years ago as military barracks. It was converted soon after into a market, mostly for vendors of olive-oil soap. The spacious, two-level Ottoman stone building remains soap-centric today. On the ground level, a dozen or so soap merchants run shops that form a ring around an interior courtyard and fountain.

Five years ago, the municipality of Tripoli announced plans to turn the historic building into a glossy tourist destination, which would mean evicting the merchants. The government claims the building needs to be refurbished, but the shopkeepers, including Bader Hassoun, worry about the loss of their way of life and a piece of heritage.

Tripoli’s current mayor, Nader Ghazal, is more sympathetic to the merchants than his predecessor. “I’m going to restudy this issue, and see how we can be just and fair,” he said.

DIY Natural Soap: Basic Olive Oil Soap

Heidi Corley Barto started dabbling in soap-making when her younger daughter started to experience skin issues. The Natural Soap Chef is the product of those experiments. Homemade soap allows you to control what goes into your soap, so that you can get clean while keeping nasty chemicals out of the environment and away from your skin. This week, we’ll share some of our favorite recipes from The Natural Soap Chef — just follow the step-by-step directions for make your own eco-soap at home!

Soap #1: Basic Olive Oil Soap

Bars made using just olive oil should be left in the mold for at least 48 hours. They will need at least 4 to 6 weeks to cure. You can add fragrance to this soap if you wish. Using an online fragrance calculator, select your fragrance and calculate for cold process soap at 20 ounces to determine how much to use.



  • 567 grams olive oil

Lye mixture

  • 73 grams sodium hydroxide (NaOH)
  • 215 grams distilled water


1. Measure the olive oil into your plastic container. Place the container in a larger pot and pour in enough hot tap water that the container begins to float. Set the pot on the stove and turn the heat to warm. Insert a thermometer into the oil.

2. Goggles and gloves on!

3. Measure the water into a heat-safe glass container. Measure the lye crystals into a separate small glass container. Slowly add the lye crystals to the water, stirring with your spatula as you do so. Do not inhale above this container—there will be fumes that can take your breath away! This mixture will heat up quickly. Insert a thermometer into the mixture.

4. Monitor the temperatures of the two containers. Basically, you are heating up the oil while the lye cools down. You want both to reach 110°F. As needed, refresh the hot water bath or turn the stove burner higher to raise the temperature, or use a cold water or ice bath to bring the temperature down.

5. When both the oil and the lye mixture are at 110°F, pour the lye mixture into the plastic container with the oil. Blend until the mixture reaches medium trace (it will be like thick gravy, and drizzled trails will stay on the top).

6. Pour into your chilled mold (or a clean, dry, quart size milk carton with the top cut off) and refrigerate, uncovered, for 30 minutes. Remove from the refrigerator; spray the top with isopropyl alcohol, cover loosely with plastic wrap, and refrigerate overnight.

7. Remove from the refrigerator and let sit at room temperature.

8. Unmold 48 hours after pouring into the mold. Cut into bars and place in your curing area.

Makes 8 3½-oz bars


Mixing lye with a liquid causes an exothermic chemical reaction. This means that lye will heat up any liquid to which it’s added. A room-temperature liquid can heat up above 200°F with the addition of lye.

Always add the lye crystals to whatever you’re using as your liquid. Never add liquid to your lye crystals! Adding liquid to the lye will cause a volcanic reaction—the surest way to get burned. This is a major no-no in soap making!

Always store your lye container tightly closed in a cool, dry place out of the way of animals and small children.

Saponification (the chemical reaction in the soap-making process) uses up the lye, so that there is no lye left in the finished soap. You need to leave your soap to cure in order to make sure all the lye has reacted, and that you have a sturdy finished bar of soap.

It is a good idea to reserve a few tools for soap making, such as an immersion blender, and any containers you use for lye and mixing your soap. You don’t want to contaminate food with lye or fragrance oils (despite how tasty they may smell!).
